What’s for lunch!? I know it can be hard to think of new and interesting lunch ideas to keep everyone happy.

This slice is CHEAP, EASY and super TASTY, using mainly pantry and fridge staples.

The curry is very mild, giving a subtle flavour, so it’s friendly for kids and those who don’t like a lot of spice.

It’s also perfect for a packed lunch, as it’s firm and can be handheld (without mess).

CURRIED TUNA AND CORN ZUCCHINI SLICE
1 cup frozen corn kernels
1 large zucchini, grated
1 cup mushrooms, finely chopped
425g tin tuna in springwater, drained
1 tbsp curry powder
6 eggs
1 cup wholemeal self raising flour
1 cup grated tasty cheese
salt and pepper, to season

Preheat oven to 175°C. Press grated zucchini into a tea towel, twist and squeeze out all moisture. Add this to a large bowl with all remaining ingredients. Stir well to combine. Pour into a lined 30 x 20cm tray and bake for 30 minutes or until cooked through.

  1. I am so excited because I have all ingredients in the pantry to make this. Will make them tomorrow ready for Monday’s school lunch box. Also, can I use tuna in oil instead of spring water? Would it affect consistency? X

  2. Just made them and oh my … they are so delicious and the best thing is they are firm so it’s easy for little ones to hold without the mess. Thanks again for this amazing recipe. Also do you pack them cold for lunch?
