What happens when you get your husband to cook dinner and you take the night off?
This is what happens! A creamy chorizo carbonara.

So so so delicious, creamy and flavoursome. Devoured by the kids (one wanted all the pasta, one wanted all the chorizo 😂 so that worked out!).
Is simple enough to have on the table in 20 minutes and makes for a cheap meal. Thanks to @colessupermarkets for this one!
375g curly fettuccine
2 chorizo sausages, finely chopped
1¼ cups frozen baby peas
1 cup (250ml) light thickened cream
2 eggs, lightly whisked
4 eggs, yolks only
⅓ cup finely grated parmesan
Cook spaghetti according to packet instructions in a large saucepan of boiling water, until tender. Drain well. Meanwhile, heat a large frying pan over med-high heat. Add chorizo and cook, stirring, for 5 minutes or until golden. Add peas to the pan and cook for 2 minutes or until heated through. Reduce heat to low and add the pasta. Stir to combine and season. Whisk the cream, egg, egg yolks and half the parmesan in a bowl. Pour over the pasta mixture and cook, tossing, for 1-2 mins or until sauce thickens slightly. Divide pasta among bowls + sprinkle with the remaining parmesan.
