VERSATILITY. Say it with me! It’s one of the many things I love about these rissoles. Not only are they quick, easy and delicious, but you can also make so many DIFFERENT meals out of them!!
Here are just a few suggestions:
– serve rissoles with sweet potato mash and steamed greens
– create chicken burgers complete with slaw, cheese and avocado
– divide mixture into 16 rissoles to make ‘mini’ rissoles, perfect for kids and lunchboxes
SIMPLE CHICKEN RISSOLES:
500g chicken mince
1 small red onion, finely diced
1 carrot, grated
½ cup grated tasty cheese
½ cup panko breadcrumbs
1 tsp dried mixed herbs
Preheat oven to 180°C. Combine all ingredients in a bowl and season. Divide mixture into 8 balls and shape into rissoles. Set aside. Heat 1 tbsp oil in a large frying pan over medium heat. Add rissoles and cook for 3 minutes on each side, or until golden. Transfer to a lined tray and bake for 10 minutes, or until cooked through. Serve with salad, mashed vegetables or enjoy in a burger.
