These breakfast / snack bars are gluten free, dairy free, vegan and nut free (optional). They are firm enough for little (and big) hands to hold and are super filling and wholesome. Perfect for a breakfast on the run or to throw in a lunchbox for kids who won’t eat their breakfast!

BLUEBERRY + BANANA BREAKFAST BARS:
1 cup rolled oats
2 tbsp chia seeds
1 cup milk of choice
¼ tsp salt
1 banana, mashed
1 tsp ground cinnamon
1 tsp vanilla essence
1 tsp baking powder
1 tbsp honey or maple syrup
½ cup nuts, chopped (optional)
½ cup blueberries
¼ cup shredded coconut + extra

Combine soak ingredients in a bowl. Cover + place in fridge overnight. In the morning, preheat oven to 170°C. Mix remaining ingredients through soaked oats. Spread mixture into a lined 20 x 20cm tray + garnish with extra coconut. Bake for 30 minutes. Slice into 12 bars. Enjoy for breakfast on the run or as a wholesome snack.
